Homemade pita
I don’t know what tempted me to spend so much effort in making pita, and on a weeknight. Maybe because whenever I watch one of those condensed cooking videos they make it look SO easy in the less than 10 seconds they go from start to finish. I went with this video and I guess I was also just really curious because it had a bit of vinegar in the recipe.
I used my stand mixer but I went too long and overmixed the dough - it became a bit too stiff, but the fun part and success came when I got almost all of them to puff up in the pan in the most satisfying way.
They were a bit on the dense and chewy side, but hey - pita pockets you can stuff!
